Lazy Day Beef Stew

Lazy Day Stew in a rustic white ceramic bowl. The dish features visible layers of ground beef, sliced potatoes, celery, and onions, topped with rich tomato soup and pork and beans, with steam rising for a warm, homemade appeal.

This one-pot wonder earned its name for good reason—Lazy Day Stew was Kim’s mom’s go-to when time was short but a hot, filling meal was still a must. It’s a classic ranch-style casserole: no frills, just real ingredients layered with intention and baked until perfectly tender. Whether it was a chilly winter afternoon or a long day working the land, this dish brought warmth to the table with hardly any effort.

The beauty of Lazy Day Stew lies in its simplicity. It uses pantry staples like canned beans and tomato soup, and transforms them with hearty beef, fresh potatoes, and a slow, two-hour bake in the oven. It’s the kind of meal that reminds you to slow down, savor, and make the most of what you’ve got—values that have always mattered on the ranch.

Ingredients:

  • 1 pound ground beef or stew meat
  • 2 large red or white potatoes, peeled and sliced
  • 1 medium onion, peeled and chopped
  • 1 rib celery, diced
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 (15 oz) can pork and beans
  • 1 can tomato soup

Instructions:

  1. Preheat oven to 350°F.
  2. Grease a casserole dish. Layer potatoes, onions, and celery evenly in the bottom.
  3. Sprinkle half of the salt and pepper over the vegetables.
  4. Spread pork and beans over the vegetable layer.
  5. Add ground beef on top of beans, then sprinkle with the remaining salt and pepper.
  6. Pour tomato soup over the entire dish.
  7. Cover and bake for 2 hours, or until the vegetables are tender.
